A ripe and expressive white, with more textured and rounder fruit notes than one may expect from Loire Sauvignon. Bain allows his grapes to hang longer than many other growers, resulting in a richer style of white. Sauvignon Blanc grown in limestone soils, directly pressed and allowed to ferment spontaneously. Farming is biodynamic, harvests are all done by hand, no filtering or fining is done, nothing is added save a miniscule sulfur dose for stability.
